Hummus
Ingredients:
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/4 cup tahini
- 1/4 cup fresh lemon juice (about 1 large lemon)
- 1 small garlic clove, minced
- 2 tablespoons extra virgin olive oil, plus more for serving
- 1/2 teaspoon ground cumin
- Salt, to taste
- 2 to 3 tablespoons water
- Paprika, for garnish
- Chopped fresh parsley, for garnish (optional)
Instructions:

In a food processor, combine the chickpeas, tahini, lemon juice, minced garlic, olive oil, cumin, and a pinch of salt.

Process the mixture until smooth and creamy, scraping down the sides of the bowl as needed. If the hummus is too thick, add 2 to 3 tablespoons of water, one tablespoon at a time, until you reach your desired consistency.

Taste the hummus and adjust the seasoning, adding more salt or lemon juice if needed.

Transfer the hummus to a serving bowl. Drizzle with extra virgin olive oil and sprinkle with paprika. If desired, garnish with chopped fresh parsley.

Serve the hummus with pita bread, crackers, fresh vegetables, or use it as a spread for sandwiches and wraps.
