Tarhana Çorbası (Tarhana Soup)

Ingredients:

  • 1 cup tarhana mix
  • 4 cups water or chicken broth
  • 1 cup plain yogurt
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried mint
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix the tarhana mix with water or chicken broth until well combined. Let it sit for about 10-15 minutes to soften.
  2. In a separate bowl, whisk the yogurt until smooth.
  3. In a large pot, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
  4. Pour the tarhana mixture into the pot and bring it to a gentle simmer, stirring constantly to prevent lumps from forming.
  5. Once the soup starts to thicken, reduce the heat to low and simmer for about 10-15 minutes, stirring occasionally.
  6. Gradually add the whisked yogurt into the soup, stirring continuously until well incorporated.
  7. Season the soup with dried mint, salt, and pepper according to your taste preferences. Allow it to simmer for an additional 5 minutes.
  8. Remove the soup from the heat and let it cool slightly before serving.
  9. Serve the tarhana soup hot, garnished with a drizzle of olive oil and additional dried mint if desired. Enjoy your comforting bowl of tarhana soup!
