Shepherd’s Salad

Ingredients:

  • 2 large tomatoes, diced
  • 1 cucumber, diced
  • 1 green bell pepper, diced
  • 1 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and black pepper to taste

Instructions:

  1. In a large mixing bowl, combine the diced tomatoes, cucumber, bell pepper, sliced onion, and chopped parsley.
  2. Drizzle the lemon juice and olive oil over the vegetables.
  3. Season with salt and black pepper according to your taste preferences.
  4. Gently toss all the ingredients together until well combined.
  5. Allow the salad to marinate in the refrigerator for about 30 minutes to let the flavors meld together.
  6. Serve chilled as a refreshing side dish or appetizer.
