Turkish Gözleme Recipe

Ingredients:

For the dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 3/4 cup warm water

For the filling (choose one or more):

  • Spinach and feta cheese
  • Potato and cheese
  • Minced meat and onions
  • Mushroom and cheese

For cooking:

  • Olive oil or butter for frying

Instructions:

  1. In a large mixing bowl, combine the flour and salt. Gradually add the warm water and olive oil, mixing until a dough forms.

  2. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic. Divide the dough into equal-sized balls and cover them with a clean kitchen towel. Let them rest for about 30 minutes.

  3. While the dough is resting, prepare your desired filling. For example, sauté spinach with some olive oil and garlic until wilted, then mix it with crumbled feta cheese.

  4. Roll out one dough ball on a floured surface into a thin circle, about 1/8 inch thick.

  5. Spread a thin layer of the prepared filling over half of the dough circle, leaving a small border around the edges.

  6. Fold the other half of the dough over the filling to cover it, then press the edges firmly to seal.

  7. Heat a skillet or griddle over medium heat and brush it with a little olive oil or butter.

  8. Carefully transfer the filled dough to the skillet and cook for about 2-3 minutes on each side, or until golden brown and crispy.

  9. Repeat the process with the remaining dough balls and filling.

  10. Once cooked, remove the gözleme from the skillet and cut it into wedges. Serve hot with yogurt or ayran (a Turkish yogurt drink) on the side. Enjoy your delicious Turkish gözleme!
