Menemen
Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 green peppers, diced
- 4 eggs
- Salt and pepper to taste
- Optional: feta cheese, crumbled
- Optional: chopped parsley or green onions for garnish
Instructions:

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook for 2-3 minutes until softened.

Add the diced tomatoes and green peppers to the skillet. Cook for another 5-6 minutes, stirring occasionally, until the vegetables are softened and the tomatoes release their juices.

Crack the eggs directly into the skillet over the cooked vegetables. Use a spatula to gently scramble the eggs, incorporating them with the vegetables.

Season the mixture with salt and pepper to taste. If using, sprinkle crumbled feta cheese over the top of the menemen.

Continue cooking and stirring the mixture until the eggs are fully cooked but still moist and slightly runny.

Once cooked, remove the skillet from the heat. Garnish the menemen with chopped parsley or green onions if desired.
