- Ingredients:
- 4 medium-sized eggplants
- 250g ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 green peppers, chopped
- Salt, pepper, paprika
- Olive oil
- Instructions:
- Cut the eggplants lengthwise and make slits in the flesh.
- Sauté the chopped onion in olive oil until translucent, then add ground beef and cook until browned.
- Add diced tomatoes, chopped peppers, salt, pepper, and paprika, and cook for a few minutes.
- Stuff the eggplants with the cooked mixture and place them in a baking dish.
- Drizzle olive oil over the eggplants and bake in the oven at 180°C (350°F) for 30-40 minutes or until the eggplants are tender.
- Serve hot.
