Yayla Çorbası (Yogurt Soup)
Ingredients:
- 1/2 cup rice
- 6 cups chicken or vegetable broth
- 1 cup plain yogurt
- 2 tablespoons all-purpose flour
- 2 eggs
- 2 cloves garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh mint leaves for garnish
Instructions:
- In a medium-sized saucepan, bring the chicken or vegetable broth to a boil. Add the rice and reduce the heat to low. Let it simmer until the rice is cooked, about 15-20 minutes.
- In a mixing bowl, whisk together the yogurt, flour, and eggs until smooth.
- Once the rice is cooked, reduce the heat to very low. Slowly pour the yogurt mixture into the saucepan, stirring constantly to prevent curdling.
- In a separate small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Pour the garlic-infused butter into the soup and stir well to combine. Season with salt and pepper to taste.
- Let the soup simmer gently for another 5-10 minutes, stirring occasionally, until it thickens slightly.
- Remove the soup from the heat and ladle it into serving bowls.
- Garnish each bowl of soup with fresh mint leaves.
- Serve the Yayla Çorbası hot, accompanied by crusty bread if desired. Enjoy your comforting and creamy yogurt soup!
