Yayla Çorbası (Yogurt Soup)

Ingredients:

  • 1/2 cup rice
  • 6 cups chicken or vegetable broth
  • 1 cup plain yogurt
  • 2 tablespoons all-purpose flour
  • 2 eggs
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh mint leaves for garnish

Instructions:

  1. In a medium-sized saucepan, bring the chicken or vegetable broth to a boil. Add the rice and reduce the heat to low. Let it simmer until the rice is cooked, about 15-20 minutes.
  2. In a mixing bowl, whisk together the yogurt, flour, and eggs until smooth.
  3. Once the rice is cooked, reduce the heat to very low. Slowly pour the yogurt mixture into the saucepan, stirring constantly to prevent curdling.
  4. In a separate small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  5. Pour the garlic-infused butter into the soup and stir well to combine. Season with salt and pepper to taste.
  6. Let the soup simmer gently for another 5-10 minutes, stirring occasionally, until it thickens slightly.
  7. Remove the soup from the heat and ladle it into serving bowls.
  8. Garnish each bowl of soup with fresh mint leaves.
  9. Serve the Yayla Çorbası hot, accompanied by crusty bread if desired. Enjoy your comforting and creamy yogurt soup!

This recipe serves 4-6 people. Adjust the ingredients according to your preferred serving size.
