White Bean Salad – Piyaz

Ingredients:

  • 2 cups cooked white beans (canned or cooked from dry)
  • 1 small red onion, thinly sliced
  • 2 medium tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar or lemon juice
  • Salt and freshly ground black pepper to taste
  • Optional: olives and hard-boiled eggs for garnish

Instructions:

  1. If using dry white beans, cook them according to the package instructions until tender. If using canned beans, drain and rinse them under cold water.
  2. In a large mixing bowl, combine the cooked white beans, thinly sliced red onion, diced tomatoes, and chopped parsley.
  3. Drizzle the extra virgin olive oil and red wine vinegar (or lemon juice) over the salad ingredients.
  4. Season with salt and freshly ground black pepper according to your taste preferences.
  5. Gently toss all the ingredients together until well combined.
  6. Taste the salad and adjust the seasoning if necessary.
  7. Transfer the white bean salad to a serving platter or individual plates.
  8. If desired, garnish with additional parsley, olives, and slices of hard-boiled eggs.
  9. Serve the piyaz immediately as a side dish or appetizer.
